{"id":272,"date":"2018-08-19T16:09:10","date_gmt":"2018-08-19T16:09:10","guid":{"rendered":"https:\/\/www.unveilingwiesbaden.com\/?p=272"},"modified":"2018-09-05T06:13:52","modified_gmt":"2018-09-05T06:13:52","slug":"marmorkuchen-marble-cake","status":"publish","type":"post","link":"https:\/\/www.unveilingwiesbaden.com\/index.php\/2018\/08\/19\/marmorkuchen-marble-cake\/","title":{"rendered":"Marmorkuchen \u2013 Marble Cake"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>It&#8217;s been a year since I received, <strong><a href=\"https:\/\/www.amazon.com\/Classic-German-Baking-Pfeffern%C3%BCsse-Streuselkuchen\/dp\/1607748258\/ref=sr_1_1?ie=UTF8&amp;qid=1534691469&amp;sr=8-1&amp;keywords=classic+german+baking+luisa\">Classic German Baking by Luisa Weiss<\/a>.<\/strong>\u00a0 And I&#8217;m happy to share, I finally rolled up my sleeves, tied on my apron and stained my first page.\u00a0 The recipe I wanted to tackle first is found at nearly every German coffee house, Marble Cake (Marmorkuchen). This cake marries well with a cold glass of milk or steaming cup of coffee. I like it in the morning, afternoon or evening. It&#8217;s an &#8220;evergreen&#8221; dessert, available in pastry cases: spring, summer, fall and winter.<\/p>\n<p>This cake was a hit, not a crumb was left on the plate! This buttery beauty will please the palate of anyone who appreciates the goodness that comes from simple wholesome ingredients. I&#8217;m not a fan of white chocolate, and must admit, I was skeptical when I saw it was a major player in this recipe, but I&#8217;ve since conceded and believe it&#8217;s the magic ingredient that elevates Ms. Weiss&#8217; recipe above all others.\u00a0 This is the best Marble Cake!<\/p>\n<p>I hope you enjoy.<img loading=\"lazy\" class=\"wp-image-130 size-medium alignleft\" src=\"https:\/\/www.unveilingwiesbaden.com\/wp-content\/uploads\/2018\/07\/IMG-9054-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/www.unveilingwiesbaden.com\/wp-content\/uploads\/2018\/07\/IMG-9054-225x300.jpg 225w, https:\/\/www.unveilingwiesbaden.com\/wp-content\/uploads\/2018\/07\/IMG-9054-768x1023.jpg 768w, https:\/\/www.unveilingwiesbaden.com\/wp-content\/uploads\/2018\/07\/IMG-9054-769x1024.jpg 769w\" sizes=\"(max-width: 225px) 100vw, 225px\" \/><\/p>\n<p>Ingredients<\/p>\n<p>3 \u00bd ounces bittersweet chocolate, chopped<br \/>\n3 \u00bd ounces white chocolate, chopped<br \/>\n18 tablespoons unsalted high-fat, Euro-style butter, softened<br \/>\n1 \u00bc cups sugar<br \/>\n\u00bc teaspoon salt<br \/>\n1 teaspoon vanilla extract<br \/>\n4 large eggs<br \/>\n2 cups all-purpose flour<br \/>\n1 tablespoon baking powder<br \/>\n2 tablespoons cocoa powder<br \/>\n3 tablespoons whole milk<br \/>\nconfectioners\u2019 sugar for dusting<\/p>\n<p>&nbsp;<\/p>\n<ol>\n<li>Preheat oven to 350F\/180C.\u00a0 Be sure to place your oven rack in the bottom third of the oven. Prepare your bundt pan by spreading butter in every nook and crevice and dusting with flour.<\/li>\n<li>Put bittersweet and white chocolate in two separate stainless steel bowls and place on top of a saucepan filled with simmering water. Melt chocolates one bowl at a time (watch it w\/ an eagle eye &#8211; once burned, there&#8217;s no return!).\u00a0 After melted, set aside and allow to cool.<\/li>\n<li>Place softened butter in bowl of stand mixer fitted with a flat beater attachment. Begin to add sugar and salt, beating until light and fluffy.\u00a0 Next add the vanilla extract, followed by the eggs (one at a time), scraping down the sides of the bowl after each addition until well combined.<\/li>\n<li>In a separate bowl, whisk the flour and baking powder.\u00a0 Begin to beat the flour mixture into the butter mixture.\u00a0 Scrape out two-thirds of the batter into a medium bowl and mix in the melted white chocolate into the larger batch of batter until there are not more streaks.<\/li>\n<li>Add the melted chocolate, cocoa powder, and milk to the remaining one-third of the batter and beat until combined and streak-free.<\/li>\n<li>Pour half of the white batter into the budnt pan, then top with the bittersweet batter.\u00a0 Then scrape the rest of the white batter on top.\u00a0 To create a marble pattern, using a butter knife, swirl the blade through the batter.\u00a0 Place pan in oven and bake for 60 minutes (good to start testing after 45 min).\u00a0 It&#8217;s done when the white area of the cake is golden and a tester comes out clean.<\/li>\n<li>Place pan on a cooling rack and allow to sit for 10 minutes before unmolding and letting it cool upside down.\u00a0 Once cake has cooled completely, you can dust with confectioners&#8217; sugar.
