I bought a bottle of their <\/span><span style=\"font-weight: 400;\">Sp\u00e4tburgunder<\/span> <span style=\"font-weight: 400;\">\u00a0(Pinot Noir), just so I could give this recipe a whirl. \u00a0I loved the earthy taste, especially paired with a slice of sourdough!<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><b>Chestnut Soup a la Bacchus<\/b><\/p>\n<p><span style=\"font-weight: 400;\">(Serves four)<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">2 small onions or shallots<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">1-2 Tbsp thyme<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">1 cup chestnuts (peeled and vacuumed)<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">1 Tbsp sunflower oil or butter<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">2 \u00bd cups chicken bouillon <\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">5 ounces milk or cream (I used \u00bd &amp; \u00bd) <\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">Shot of Bacchus Riesling or Pinot Noir (I used Pinot Noir)<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">Salt and pepper to taste<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span> <span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">Peel onions or shallot and finely dice. Chop the chestnuts.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">Heat butter or oil in a saucepan. Braise onions or shallots, add thyme and chestnuts. Deglaze with wine. \u00a0Add chicken broth. Simmer for roughly 30 minutes in a closed saucepan over low heat.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">Puree the soup with the hand blender. \u00a0Stir in milk\/cream.<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">Season to taste.
