It&#8217;s 2020 and we&#8217;re in the mist of a pandemic, say no more. Sold! The following recipe was a family hit. The empty bowl pictured is a testament.<\/p>\n<h2><b>Ingredients<\/b><\/h2>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">3 cups fresh blueberries<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 tablespoons white sugar<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 teaspoon cinnamon<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u2153 cup orange juice<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u2154 cup all-purpose flour (I substitute spelt for half of flour)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bc teaspoon baking powder<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd teaspoon salt<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd cup butter, softened<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd cup white sugar<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 egg<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\u00a0 teaspoon vanilla extract<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h2><b>Directions<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Preheat oven to 375 degrees F (190 degrees C).<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In an 8 inch square baking dish, add blueberries, sugar, cinnamon and orange juice.\u00a0 In a separate small bowl mix flour, baking powder and salt. In a medium bowl cream butter and sugar until light and airy. Beat in egg and vanilla extract. Gradually add the flour mixture, stirring until\u00a0 combined. Dollop batter by rounded tablespoons over the blueberry mixture. Try to cover as much filling\u00a0 as possible.
