Martina\u2019s delicious \u201cFantasy Blueberry Cake\u201d was served when I interviewed her daughters, Janine and Jasmin. I followed her instructions precisely and was left with a beautiful tender cake topped with billows of quark cream and blueberries soaked in quince jelly. Heaven. Not a crumb was left on plates! If you would like the backstory on the day this cake was served you can read it<strong><a href=\"https:\/\/www.unveilingwiesbaden.com\/index.php\/2021\/05\/14\/a-tale-of-two-sisters\/\" data-type=\"URL\" data-id=\"https:\/\/www.unveilingwiesbaden.com\/index.php\/2021\/05\/14\/a-tale-of-two-sisters\/\"> HERE.<\/a><\/strong> Thank you, Martina <\/p>\n\n\n\n<p><strong>Cake base<\/strong><\/p>\n\n\n\n<ul><li>4 eggs<\/li><li>200g sugar<\/li><li>1 packet of vanilla sugar<\/li><li>stir until frothy<\/li><li>150g flour<\/li><li>1 teaspoon of baking powder<\/li><li>mix and mix with egg mass<\/li><\/ul>\n\n\n\n<p>Bake in a greased spring-form pan at 170 \u00b0C for about 30 minutes<\/p>\n\n\n\n<p>Cut through once after cooling down<\/p>\n\n\n\n<p><strong>Filling and topping<\/strong><\/p>\n\n\n\n<p>Coat the 1. bottom with a thick layer of blueberry jam (approx. 400g)<\/p>\n\n\n\n<p>Lay on the second base and coat with quark cream<\/p>\n\n\n\n<ul><li>500g low-fat quark<\/li><li>6 tablespoons of Greek yogurt<\/li><li>1 packet of vanilla sugar<\/li><li>mix and then fold in 6 pieces of dissolved gelatin<\/li><\/ul>\n\n\n\n<p>Brush the 2. floor with it<\/p>\n\n\n\n<p>Put the cake ring around and put it in the fridge for about 30 minutes<\/p>\n\n\n\n<p>Heat 4 tablespoons of quince or apple jelly so that it becomes liquid<\/p>\n\n\n\n<p>Mix with 500g fresh blueberries and spread over the cooled quark cream<\/p>\n\n\n\n<p>Keeps for a good 4 days if chilled<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This recipe was gifted to me by a beautiful woman from Bechtheim, Germany.
