While the nuns did not relinquish their chestnut soup recipe, I\u2019m happy to share the one I whipped up in my kitchen.\u00a0 I hope this hearty nourishing soup finds a seat at your table and brings comfort where it\u2019s needed. This is Autumn\u2019s bounty in a bowl ~ <\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>Servings: 6<\/strong><\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<p><strong>-1 Tbsp vegan butter (or oil)<\/strong><\/p>\n\n\n\n<p><strong>-2 shallots chopped<\/strong><\/p>\n\n\n\n<p><strong>-1 large leek chopped&nbsp;<\/strong><\/p>\n\n\n\n<p><strong>-1 large carrot chopped<\/strong><\/p>\n\n\n\n<p><strong>-1 lb. potatoes cubed<\/strong><\/p>\n\n\n\n<p><strong>-500g shelled roasted chestnuts (reserve a few for garnish)<\/strong><\/p>\n\n\n\n<p><strong>-6 cups vegetable broth<\/strong><\/p>\n\n\n\n<p><strong>-\u00bc tsp ground cloves<\/strong><\/p>\n\n\n\n<p><strong>-1 tsp ground celery&nbsp;<\/strong><\/p>\n\n\n\n<p><strong>-\u00bc tsp ground ginger<\/strong><\/p>\n\n\n\n<p><strong>-1 tsp salt<\/strong><\/p>\n\n\n\n<p><strong>-100g soft tofu<\/strong><\/p>\n\n\n\n<p><strong>-1 Tbsp maple syrup<\/strong><\/p>\n\n\n\n<p><strong>-Handful of chives (for garnish)<\/strong><\/p>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<ol><li><strong>Melt the butter\/oil in a large pot. Add shallots, leeks and carrots. Saut\u00e9 the vegetables for approximately five minutes.<\/strong><\/li><li><strong>Add potatoes, chestnuts, broth and seasonings. Bring to a boil, then simmer for 25 minutes. When potatoes easily split with a fork, puree soup with an immersion blender, then add tofu and continue pureeing until smooth and creamy.<\/strong><\/li><li><strong>Garnish with chopped chives and reserved crumbled chestnuts.
