Maronen Suppe – Chestnut Soup

This delicious soup is on the Bacchus Speicher website. I bought a bottle of their Spätburgunder  (Pinot Noir), just so I could give this recipe a whirl.  I loved the earthy taste, especially paired with a slice of sourdough!

 

Chestnut Soup a la Bacchus

(Serves four)

2 small onions or shallots

1-2 Tbsp thyme

1 cup chestnuts (peeled and vacuumed)

1 Tbsp sunflower oil or butter

2 ½ cups chicken bouillon

5 ounces milk or cream (I used ½ & ½)

Shot of Bacchus Riesling or Pinot Noir (I used Pinot Noir)

Salt and pepper to taste



Peel onions or shallot and finely dice. Chop the chestnuts.

Heat butter or oil in a saucepan. Braise onions or shallots, add thyme and chestnuts. Deglaze with wine.  Add chicken broth. Simmer for roughly 30 minutes in a closed saucepan over low heat.

Puree the soup with the hand blender.  Stir in milk/cream.

Season to taste. Enjoy 🙂
